Beef and Broccoli in Stout Oyster Sauce

By Bryce Eddings, About.com

My step-son loves beef and broccoli in oyster sauce. Any time we have Chinese that's always his choice. This recipe adds stout to the sauce.

Prep Time: 30 minutes

Cook Time: 10 minutes

Ingredients:

  • 3/4 to 1 pound lean beef cut into narrow strips
  • Black pepper
  • 3 Tbsp soy sauce
  • 3 Tbsp and 3/4 cup stout
  • 1 clove garlic, finely chopped
  • 1 dried red pepper, crushed
  • 1 pound fresh broccoli, chopped into bite-sized pieces
  • 3 green onions, chopped
  • 1 Tbsp cornstarch
  • 2 Tbsp oyster sauce
  • 2 Tbsp cooking oil
  • 3 cups cooked rice

Preparation:

Season the beef strips with black pepper. Combine the beef, soy sauce, garlic, red pepper and 3 Tbsp of stout in a shallow dish. Cover and marinate in refrigerator at least one hour.

Prepare the vegetables and place them in a bowl near where you plan to cook.

Prepare the sauce by combining the remaining stout, oyster sauce and cornstarch in a small bowl. Stir until the cornstarch in completely dissolved.

Drain the beef and discard the marinade. Heat the oil in a wok or large skillet. When the oil is hot add the beef and stir-fry until it is cooked through.

Remove the meat from the skillet. Add the vegetables and stir-fry until the onions just turn tender. Add cooked beef and sauce. Stir to make sure the ingredients are coated with the sauce. Cook until sauce thickens.

Serve over rice.
