Porter Jack Barbeque Sauce - A version of black jack sauce for beer lovers.


You're probably familiar with black jack barbeque sauce. Made with coffee, it's got a very nice flavor that goes well with rich meats. Here's a version of that sauce made with porter instead of coffee. I like it a bit thicker than traditional black jack so I add some cornstarch. You can skip that bit if you want to. Whether you use the cornstarch or not, be sure to add that last bit of beer at the end. It brings out the aroma and flavor of the beer in the sauce.

Cook Time: 1 hour, 3 minutes

Total Time: 1 hour, 18 minutes


  • One 12 ounce bottle of porter or any black/dark beer
  • 1 cup Worcestershire sauce
  • 1/2 cup brown sugar
  • 1/2 cup apple cider vinegar
  • 1 cup ketchup
  • 3 Tbsp chili powder
  • 2 tsp salt
  • 1 large chopped onion
  • 1 or 2 chopped habanero pepper
  • 6 minced garlic cloves
  • 4 Tbsp cornstarch (optional)


Combine 1 cup of the beer and all the other ingredients except for the cornstarch in a medium pot. Reserve the rest of the beer.

Bring to a boil, reduce heat, cover and simmer for an hour.

Dissolve the cornstarch in the remaining beer and stir into the sauce. Keep stirring until it starts boiling again then remove it from the heat.
