Definition:
Flocculate means to gather or coagulate loosely. In brewing flocculate is generally used to describe how active yeast cells behave. Ale yeasts tend to flocculate near the top of the fermentation tank while lager yeasts flocculate near the bottom.
Examples: Lager yeast is said to be a bottom fermenting yeast because the cells flocculate at the bottom of the tank during active fermentation.
