The Definition of Ale

Definition: The distinction of an ale vs. other beer, lager, is based on the type of yeast used to ferment the beer. Ale yeast cells tend to flocculate, or gather, towards the top of the fermentation tank. The yeast also prefers warmer temperatures, 40 to 55 degrees Fahrenheit.
